Have you had a look at file
/linux/arch/m68knommu/platform/68EZ328/ ucsimm-head.S

In this file, around the line 50, all the registers that you changed
with setenv can be initialized at each boot of linux with your parameters
if you remove or define the line #undef INIT_LCD , line 8
