Hi,

You can use HC logic ic's to interface with 5v inputs.
for example, you can use a 74hc541 to convert the 3.3v outputs to 5v outputs, and
these can then be connected to the inputs of the lcd. So you can use an lcd panel
with 5v logic.
(hc logic inputs are compatible with the 3.3v logic in the ucsimm)

Backlights mostly use a high voltage, so you need a special circuit to do that, see
for example in the schematic on http://www.uclinux.com/uC68EZ328/appnotes/
