I don't know of any PC based ColdFire simulators capable of running
uClinux.

There is a number of ColdFire eval boards readily available.

I have used the Arnewsh (5206 and 5307), the Cadre (Matrix design)
boards (5206e and 5307), and the eLITE 5206e board. All of these 
are supported by uClinux...
